I finished the game and now I want to get 100% but I don’t have all the stranger missions, I’m missing “Aztec Gold” and “Love is the Opiate”, would I still be able to go back and do them since I finished the game?

Yes, the only mission you can’t complete after the end of the main storyline is “I Know You”.
